Caramel Marshmallow Slice

INGREDIENTS:

BISCUIT BASE
1/2 cup plain flour
1/2 cup self-raising flour
1 cup desiccated coconut
1/2 cup brown sugar
100g melted butter

CARAMEL.
1 can condensed milk
30g butter
2 tablespoon golden syrup
MARSHMALLOW
1 cup caster sugar
1 cup water
1 tablespoon gelatine
1 teaspoon vanilla
food colouring of your choice

DIRECTIONS:




 TO MAKE THE BISCUIT BASE
*Combine flour, coconut, sugar and butter in a bowl and press into a greased tin (30 x 20)
*Bake in a moderate oven for about 15 minutes or until lightly brown.
*Wait for it to cool

TO MAKE THE CARAMEL
*Combine condensed milk, butter and syrup in a saucepan stir over heat until simmering, simmer until mixture is golden brown and thickened about 8 minutes.
*Pour over biscuit base and cool.
TO MAKE THE MARSHMALLOW
*Combine sugar, water and gelatine in a saucepan and stir over low heat until gelatine dissolves, do not boil, simmer and continue to stir for 5 mins.
*Pour into a bowl, cool. add vanilla and beat until thick.
*Pour marshmallow over caramel, spread evenly and sprinkle with coconut
*Put in the fridge until set then cut into squares.

Mint Aero Chocolate Cheesecake

INGREDIENTS:

BASE
4oz Digestive Biscuits (about 12 mcvities digestives)
3oz of Melted Butter

CHEESECAKE MIXTURE
320g Philadelphia Soft Cheese Cadbury Chocolate / Philadelphia Soft Cheese
250g Icing sugar
250ml Whipping cream
2 Large Mint Aero Bars

DIRECTIONS:

*Crush the digestive biscuits to your preference and slowy add in the melted butter.
*Again the butter is to your preference.
*The more butter to more your base will stay together
*Line the tin with cling film as this helps get the cheesecake out easy when it is set.
*Cover the base of the tin with the crushed biscuit mix.
*Mix together the Philadelphia Soft Cheese Cadbury Chocolate and the icing sugar.
*Whip the whipping cream and then add it to the mixture.
*Grate the 2 Aero bars.
*Add about 3/4 of it to the mixture and mix together.
*Spread the mixture on top of the biscuit base.
*Add the rest of the grated aero to the top of the cheesecake.
*Now leave to set over night in the fridge.

Easy Lime Cake Recipe



Ingredients
For the Lime Cake:
1 cup whole full fat Greek yoghurt
1½ teaspoon baking powder
1¾ cups of sifted plain flour
1 cup caster sugar
⅓ cup of olive oil
¼ cup lime juice
zest of one lime
2 eggs
½ teaspoon salt



Directions:

Pre-heat oven to 180c/350f and grease a 22cm baking tin.

Mix all the wet ingredients in a bowl until well combined. In a separate, large bowl, combine the dry ingredients.

Pour the mixed wet ingredients into the dry ingredients and mix with a wooden spoon till just combined (overworking the batter will result in a tough cake).

Pour into the baking tin and cook for 45-50 minutes, or until the cake is lightly browned on top and a skewer comes out clean when poked into the centre.


When cool mix the topping ingredients and sprinkle over the top of the cake to make it look pretty.

Honey Chicken Recipe



ingredients:
Skinless chicken breast
 2 Tsp. coconut or olive oil
RUB
 1 Tsp. garlic powder
2 Tsp. chili powder
 1/2 Tsp. onion powder
1/2 Tsp. coriander
1 Tsp. Sea salt
1 Tsp. cumin
 1/2 Tsp. chipotle chili powder
glaze
- 1/2 c. Honey
- 1 Tbsp. Cider vinegar

directions:
- Combine the rub spices in a bowl, mix well. Drizzle oil over chicken breast and coat well. Toss chicken with spice rub to coat all sides. Grill chicken for 4-6 min. on each side. While chicken is grilling. Warm honey in microwave so it's not thick. Add the vinegar and mix well. Brush glaze well on chicken on both sides. Grill until chicken is cooked fully, Enjoy !!

Crock Pot Cube Steak




6 cube steaks
1 medium onion peeled and sliced into rings
1 can cream of chicken soup
1 can cream of celery soup
1 packet Lipton Onion Soup Mix
1/2 soup can of water
salt and pepper

How to make it :

Peel, slice and separate the rings of one medium sized onion.
Salt and pepper each cube steak.
Place 2 cube steaks in the bottom of your crock-pot.
Top with onions and repeat. Separating each addition of meat with onions. This will help separate them later and avoid them being one melded mass of cube steak.

In a separate bowl, add the cream of soups and water and mix it up. Pour the soup mixture over the meat..
Sprinkle the onion soup mix on top, put the lid on the crock-pot and turn it on low.
Soon your kitchen will start to smell delicious and 6-7 hours later you will have a dinner! Add a side of mashed potatoes to help enjoy the gravy an a salad or green veggie and you are ready to eat.

Note: If you like cream of mushroom soup, I'm sure you can use that as well. As for me, I'm not a fan, so I opted for a different combination.

Basic Chocolate Cup Cake Recipe


Ingredients:
5 oz (150g) softened Butter
5 oz (150g) superfine (castor) sugar
6 oz (175g) self-raising flour
3 eggs
2 tbls cocoa powder
1 tsp vanilla extract

Method:
Pre-heat the oven to 350oF (180oC).
Line a 12 cup cake pan, with cup cake papers.
Crack the eggs into a cup and beat lightly with a fork.
Place all the ingredients in a large bowl.
Beat with an electric mixer for 2 minutes, until light and creamy.
Divide the mixture evenly between the cake cases.
Bake for 18-20 minutes until risen and firm to touch.
Allow to cool for a few minutes and then transfer to a wire rack.

Granny Cake







1 1/2 cup sugar
2 cup flour
1/2 tsp. salt (omit if using self-rising flour)
1 tsp. baking soda (omit if using self-rising flour)
2 eggs
1 (20 oz.) can crushed pineapple in its own juice (including juice)
1 cup brown sugar
1 cup chopped pecans

1 cup evaporated milk
1/2 cup sugar
1 stick margarine
1 tsp. vanilla

Mix the sugar, flour, salt, soda, eggs and pineapple together and pour into a 9 x 13 pan. Sprinkle the top with one cup brown sugar and one cup chopped pecans. Bake at 350 degrees for 45 minutes.

Cook the milk, sugar, margarine and vanilla until mixture comes to a rolling boil.

AFTER THE CAKE HAS BAKED AND RIGHT OUT OF THE OVEN, pour the cooked milk mixture over the entire cake.
